Ingredients
For the Vanilla Sponge (makes 3 layers per tier)
(Double the recipe if making two tiers)

2 tsp baking powder

½ tsp bicarbonate of soda

½ tsp salt

300g caster sugar

225g unsalted butter, softened

4 large eggs, room temperature

2 tsp vanilla extract

350ml whole milk, room temperature
For the Buttercream Frosting

500g unsalted butter, softened

1kg icing sugar, sifted

2 tsp vanilla extract

4–6 tbsp milk or double cream

Gel food colouring (optional, for intricate piping)
For the Filling

Additional buttercream, or

Raspberry jam / lemon curd (optional)
Instructions
1. Bake the Cake Layers
-
Preheat the oven to 180°C (160°C fan).

Grease and line three round cake tins (either 6-inch or 8-inch depending on your tier size).

In a bowl, whisk together flour, baking powder, bicarbonate of soda, and salt.

In another bowl, beat butter and sugar until pale and fluffy (about 3–4 minutes).

Add eggs one at a time, beating well after each addition.

Mix in vanilla extract.

Add the dry ingredients in three additions, alternating with the milk, mixing just until combined.

Divide batter evenly between the tins and smooth the tops.

Bake 25–30 minutes or until a skewer comes out clean.

Cool completely before frosting.
2. Make the Buttercream

Beat the softened butter for 3 minutes until creamy and pale.

Add icing sugar gradually, mixing on low until incorporated.

Add vanilla and 4 tbsp milk/cream, then beat on high for 3–5 minutes until fluffy.

If piping intricate designs, divide into bowls and colour as desired.
3. Assemble the Cake

Level each cake layer with a knife.

Place the first layer on a board. Spread with buttercream (or jam/curd + a thin buttercream dam).

Add the second layer, then repeat.

Add the third layer and press gently to secure.

Apply a crumb coat (a thin layer of frosting), then chill 20 minutes.

Apply a smooth final layer of buttercream.
4. Create the Intricate Frosting Design
