Destemming and crushing, direct pressing, 24 hours of decanting, use of selected yeasts; alcoholic fermentation for a minimum of 15 days with temperature control between 12 and 14 degrees. Excellent with lean grilled meat, pasta, pizza and ideal with aperitifs. Also goes well with tapas, sushi, risotto and highly seasoned fish.
